Savor the exquisite flavors of the Middle East with Chef Vincent’s Grilled Lamb Koftas. Made with finely ground lamb, enriched with a melody of spices, and accented with fresh parsley, these koftas are grilled to achieve a perfect sear outside and a tender, flavorful interior. He pairs them with toasted pita triangles and a hearty chopped Greek Salad of tangy cherry tomatoes, cool cucumber, crisp green bell pepper, briny Kalamata olives, and savory Feta cheese. Use the accompanying tzatziki—a refreshing mix of Greek yogurt, extra-virgin olive oil, and fresh mint—as a dip. Feast mode—activate!

Lamb and Pita were very good. Did not like nuking the veggies or nor being able to create sandwhick because Pita was too small.
