My native country is Mexico, and I am extremely passionate about my roots — especially the diversity found in Mexican gastronomy. Cooking is not just about putting a dish on the table. It is about passion, love and subtlety when preparing it. It is finding the perfect balance of seasonings, colors, and flavors to create exquisite harmony.My love of cooking began 25 years ago at the age of 12 when I started working in restaurants in Mexico. I found my true passion there and decided to dedicate myself to discovering great contrasts and diversity in gastronomy.I arrived in New York at the age of 20. Since then I have focused on developing my passion. My first experience was at a Mexican restaurant, La Hacienda. I then assisted with the opening of the Dos Caminos Restaurant in New York. I went to work at the Rosa Mexican Restaurant where I trained the staff at the Atlanta, Georgia opening, and ended my stay there as a pastry chef. Over the years I have worked in different restaurants as Manager, working my way up to Executive Chef in restaurants such as Gardenia, La Casa Agave, Vida Verde and more.In 25 years of this beautiful profession I realize only one thing: I don’t cook to live, I live to cook.

Arrived with the sauce container cracked, it leaked everywhere. My son ate them same day and said they were pretty good. I would suggest making sure the packing is secure, could have been so much better im sure.

Beef Birria Quesadillas

The cabbage slaw/salad I didnt try, it was soggy and unappealing... however the quesadillas are delicious! The corn tortillas are great and taste fresh. The meat is tender and filled with flavor. I do pour the barria sauce into them and smear them with the avocado sauce. Id eat a dozen of these, they are so so good. If i could skip the coleslaw and grab another quesadilla that would be even better.

The filling is absolutely delicious! The meat is tender and juicy. However, the tortilla gets tough while warming the food. This is a meal where you have to warm the quesadillas (I think they are actually soft tacos) on a plate and the sauce in a bowl, not in the original packaging. Why not package the tortillas separately? I’d be happy to assemble the tacos. Also why call them quesadillas?

If zero stars was an option, I would have selected it. I really would like to request a refund for this meal. The empanada was soggy, and the filling was garbage. To my knowledge I’ve never eaten dog food, but part of me wonders if CU opened a can of low value dog food and filled the dough. The potatoes were thick and lumpy. I had to throw the meal away. It was that bad.
