By adding them to the rich seafood stock he uses to slowly cook the rice and aromatic vegetables, he infuses their heat and almost berry-like flavor with a hint of smoke into every bite. One of my pescetarian favs from CookUnity. Nice to have seafood outside of just shrimp, and a super tasty dish overall.
