Bubb's Filet Mignon

Meat was pretty chewy even with preparing in oven. But beef doesn't seem to age well in refrigeration unfortunately.

Cooked perfectly, juicy and tender. I'd double the size of the potatoes and only do 1/2 the leeks. Detracts from a perfect serving
