Chef Chris came up with this spin on shrimp and grits by just experimenting and having a little fun with some delicious classic combinations. Chef's creamy white cheddar-infused risotto makes a perfect base for juicy, buttery Cajun-style blackened shrimps, especially when it's finished off with house-rendered crispy pancetta lardons, white cheddar, and green onions. A drizzle of bright tomato, garlic, and herb sauce rounds out the dish. This is a meal where the title really says it all.

Chris Ratel has been working with food since the age of 13. He attended the School for Food and Hotel Management in NYC and worked with Park Hyatt Hotels for years. He also worked in NYC staples such as Sardis on Broadway, Lundi Brothers in Brooklyn and the Oyster Bar in Grand Central Station. Chris presently works privately for clients and caterers in the NYC and Hudson Valley areas.
