Souvlaki may be the most universally beloved street food hailing from Greece, and in this dish Chef Chase showcases why! Meat— in this case tender chicken— is skewered and cooked over fire to imbue it with that charred grill taste. Chef keeps the marinade simple with a little olive oil, lemon, garlic, and oregano, to really let that smokiness from the fire come through. The skewers are served over a refreshing traditional Greek Salad along with some soft pita bread to complete the dish. This meal proves that when the ingredients and techniques are high quality, not much else is needed.
