Irresistibly good, hearty and nutritious, this is one of Chef Andres' signature dishes. Boneless chicken thigh and Pearl couscous is paired with basil, juicy cherry tomatoes and peppery arugula for a well-rounded satisfying meal.
I freeze my meals and eat only 1/2 at a time. I took out the sauce before heating the whole thing and then realized the next morning that I had forgotten to add the sauce after heating! So the second half I had with reduced balsamic vinegar sauce. WHAT A DIFFERENCE!! Now I understand Unami! Thank you chef Mendez!

A WEIRD COMBINATION OF CHICKEN THAT NEEDED TO BE HEATED AND ARUGULA THAT CERTAINLY DID NOT WANT TO BE HEATED! UGH

This is really delicious but needs more vegetables - I add three or more small tomatoes and another vegetable dish (usually steamed green beans).
