Chef Steph pulls inspiration from Austin for this dish; it merges her love of Tex-Mex flavors and healthy-ish style of cooking together into one bowl. Smoky chipotle-marinated cauliflower is the star of this bowl, and comes served alongside black beans, zesty cilantro-lime rice, and fresh kale. The whole bowl comes with two sauces to dress— a mild enchilada sauce and a creamy poblano sauce. Drizzle with either or both for an explosion of flavor!
