This risotto is made with Israeli couscous in place of the traditional arborio rice, but grape leaves for an earthy, fresh flavor. A little parmesan and butter make for a creamy umami-filled finish. The risotto is paired with chicken thighs that have been marinated with Chef Einat's homemade Persian spice mix, Sabzi, then seared to juicy perfection. A side of simply sautéed Brussels sprouts rounds out this unique, satisfying meal.
